| Lettuce Bread Recipe |
Makes 1 loaf
Ingredients
1 cup of granulated sugar
2 large eggs
1/2 cup of canola blend oil
1-1/2 cups of all-purpose flour
2 teaspoons of baking powder
3/4 teaspoon of salt
1/8 teaspoon of ground ginger
1-1/2 teaspoons of lemon juice
1-1/2 cups of finely chopped lettuce - firmly packed
1-1/2 cups of toasted, chopped pecans
Instructions
1. Heat oven to 350 degrees. Grease a 9x5 loaf pan with cooking spray oil.
2. Place the sugar, eggs and oil in a mixing bowl. Beat.
3. In a separate bowl, sift together the flour, baking powder, salt, and ginger. Add the dry ingredients to the wet and stir to combine.
4. Add the lemon juice and stir again.
5. Fold in the lettuce and nuts.
6. Spoon into the prepared loaf pan.
7. Bake for 45-55 minutes or until baked through.
