| Johhny Cakes Recipe |
2/3 cup of yellow cornmeal or semolina flour
1/3 cup of flour
2 teaspoons of baking powder
1/2 teaspoon of salt
1-1/2 tablespoons of sugar
1 egg
1-1/4 cups of milk
1 teaspoon of apple cider vinegar
1 tablespoon of butter, melted
Instructions
1. Combine the first 5 ingredients in one bowl and the egg and milk in another.
2. Gradually stir the wet ingredients into the dry. Rest for at least 30 minutes or overnight in the refrigerator.
3. Stir in the melted butter.
4. Heat a cast seasoned cast iron skillet or griddle over a high to medium-high heat.
5. Grease the surface with butter.
6. Drop 3 tablespoons to 1/3 of a cup of batter for each pancake. Turn when the bottom is golden brown and the top is riddled with holes, turn and cook until baked through.
