Strawberry Crisp Recipe Strawberry Rhubarb Crisp

 Good Food Michigan Strawberry Double Crisp Recipe
Swap mascarpone cheese for butter in your next crisp or crumble.  It's delightfully good. To make a Strawberry Rhubarb Crisp use half strawberries and half diced rhubarb stalks.  Note: rhubarb leaves are toxic to humans.

Serves 6

Single Crisp Topping Ingredients
1/4 cup of mascarpone cheese or softened butter
I1/2 cup of old-fashioned rolled oats
1-1/2 tablespoons of brown sugar
1-1/2 tablespoons of white sugar
1 tablespoon of shelled, toasted, salted pumpkin seeds

Double Crisp Topping Ingredients
double the single crisp topping ingredients

Other Ingredients
spray cooking oil
1 pound fresh strawberries, trimmed and sliced or half sliced strawberries and half diced rhubarb stalks

Instructions
1. Heat oven to 375 degrees.
2. Spray a 6-cup rectangular baking dish with the cooking spray.
3. Arrange the fruit to fit snugly in the dish.
4. In a bowl, stir together the remaining ingredients. Use your hands to break up and crumble on top of the fruit.
5. Bake 30 to 40 minutes or until the fruit is soft and hot and the topping is golden brown.
6. Cool and chill.
