The Mediterranean flavors of this robust condiment go well with grilled or broiled meat, poultry or fish. Very good as a bruschetta topping or tossed into a bowl of hot pasta to dress it.
Ingredients
1-2 tablespoons your choice unsalted butter or extra virgin olive oil
2-3 cloves garlic, grated
1/4 cup of finely minced onion
1/4 cup of finely chopped sun-dried tomato (use either the moist packed in a bag or oil packed with herbs in a jar)
1 teaspoon minced fresh oregano, basil or parsley
1/2 cup of finely chopped olives (use pitted green and/or kalamata)
1/2 cup of crumbled feta cheese
optional: 1 tablespoon of toasted pine nuts
Instructions
1. Heat the butter or oil in a small skillet.
2. Saute the garlic and onions until the onions are translucent.
3. Add the remaining ingredients.
4. For a sharper taste you may wish to add a splash of olive brine.
